Can I limit the reminders to one per customer?

No need to limit it, the plugin does only send one reminder per customer, in order not to be perceived as spam.

Yet, if you want to send a second reminder, you can manually do that by clicking on theĀ Send email button in the order details (read more on this page), or by rescheduling the reminder. For reschedule, please, read more on this page.
